Chicken Omelet

For me, every trip to Thailand seems to have its signature dish: the one dish I get at every opportunity and never tire of. Last time it was fried chicken and chili sauce (but, really, who ever gets tired of fried chicken?), the time before that it was pad kee mao and way back in 2000 I couldn't get enough stewed pork knuckle. This time I stopped for every omelet I saw. They were stuffed with all kinds of fillings: chicken, pork, basil or, most frequently, mussels or oysters. This was the first in a series of omelets, this one filled with chicken.
